In the early 1900’s it was discovered that traditional long fermentation times could be reduced from 18 to 3-4 hours by the use of very small amount of certain chemicals, called oxidants, in bread or flour (Info 2018). The process of baking and making bread is a time-honored profession that is relatively unchanged; however, it varies from culture to culture. For example, in India modern day bakery products are becoming one of the most essential food items in the human diet due to readymade availability and high nutritive value (Khanna 2014). In the US the trend is very different as pallets are ever changing and a healthier option is a must. This will be the basis of the study for this discussion board. The case study done by Dr. Virender Khanna was conducted in India and consisted 500 consumers and was aimed to measure consumer behaviors towards bakery products. A questionnaire was developed to collect the data and comprised four areas of marketing mix and pricing. It was found through the study that pricing was the least affected factor causing problems. Bakery products were found to be more necessary then luxury items which kept the price down. There was no effect on the three components of the marketing mix dealing with promotion, place, or product. The baking industry in India has rapidly grown and is considered the largest industry in the country. India is also the second largest producer of biscuits in the world. The industry is currently divided into two sectors consisting of the small local bakers/vendors and the major industrial components producing global products. There does not appear to be any issues with the products produced in India concerning ingredients, preservatives, or cost. The only real issue is not an issue, as the demand for bakery products has created local jobs for bakers and farmers alike. This has also helped to keep cost down and keep the country fed. In the United States the baking industry and consumer buying habits is a different story. One of the biggest differences between our country and India is that we are a more modern, educated, and not considered a third world country. This causes problem on the back end as the population has more food choices and can pick and choose between items. There is also the fact that the US economy is starting to become more aware of healthier choices, which causes less sales of traditional items. Gluten free and non-allergens in our economic staples have become a norm and industrial bakers have found ways to satisfy the consumer. There are many people in our economy who suffer from food allergies, which has raised awareness in advertising at local restaurants and food package labels. This has also caused a ripple effect for industrial giants such as General Mills, who have replaced such things as peanut butter with almond butter. There is also the growing population of people suffering from diabetes who must watch their sugar intake. This has also led to development of such things as sugar free bread for those who still want the occasional piece of bread or sandwich. According to William Roberts Jr (Senior food and drink analyst); health related concerns and preferences play a role not only in limiting consumption of baked goods overall, but also in guiding the selection of bread consumers choose (Roberts 2016). The study done by William Roberts showed that 41% of consumers chose whole grain bread over the traditional white bread for health reasons. Weight loss by the intake of less bread was also studied and in turn has caused a negative effect on the bread isle. The healthy conscious consumer has definitely had an impact on the US bakery industry and is starting to grow into the European realm. The baking industry has seen a decline in sales since 2016 and is rapidly changing their ingredients to more gluten free, and sugar free options. For example, in India modern day bakery products are becoming one of the most essential food items in the human diet due to readymade availability and high nutritive value (Khanna 2014). In the US the trend is very different as pallets are ever changing and a healthier option is a must. This will be the basis of the study for this discussion board. The case study done by Dr. Virender Khanna was conducted in India and consisted 500 consumers and was aimed to measure consumer behaviors towards bakery products. A questionnaire was developed to collect the data and comprised four areas of marketing mix and pricing. It was found through the study that pricing was the least affected factor causing problems. Bakery products were found to be more necessary then luxury items which kept the price down. There was no effect on the three components of the marketing mix dealing with promotion, place, or product. The baking industry in India has rapidly grown and is considered the largest industry in the country. India is also the second largest producer of biscuits in the world. The industry is currently divided into two sectors consisting of the small local bakers/vendors and the major industrial components producing global products. There does not appear to be any issues with the products produced in India concerning ingredients, preservatives, or cost. The only real issue is not an issue, as the demand for bakery products has created local jobs for bakers and farmers alike. This has also helped to keep cost down and keep the country fed. In the United States the baking industry and consumer buying habits is a different story. One of the biggest differences between our country and India is that we are a more modern, educated, and not considered a third world country. This causes problem on the back end as the population has more food choices and can pick and choose between items. There is also the fact that the US economy is starting to become more aware of healthier choices, which causes less sales of traditional items. Gluten free and non-allergens in our economic staples have become a norm and industrial bakers have found ways to satisfy the consumer. There are many people in our economy who suffer from food allergies, which has raised awareness in advertising at local restaurants and food package labels. This has also caused a ripple effect for industrial giants such as General Mills, who have replaced such things as peanut butter with almond butter. There is also the growing population of people suffering from diabetes who must watch their sugar intake. This has also led to development of such things as sugar free bread for those who still want the occasional piece of bread or sandwich. According to William Roberts Jr (Senior food and drink analyst); health related concerns and preferences play a role not only in limiting consumption of baked goods overall, but also in guiding the selection of bread consumers choose (Roberts 2016). The study done by William Roberts showed that 41% of consumers chose whole grain bread over the traditional white bread for health reasons. Weight loss by the intake of less bread was also studied and in turn has caused a negative effect on the bread isle. The healthy conscious consumer has definitely had an impact on the US bakery industry and is starting to grow into the European realm. The baking industry has seen a decline in sales since 2016 and is rapidly changing their ingredients to more gluten free, and sugar free options. In regard to the DiVito brother’s bakery options, it is important to understand the target audience and their specific needs. The process of doing the research will be dependent on the audience in question. The variables will consist of young and old generations as well as different ethnic backgrounds. The delivery means should consist of questionnaires sent out on social media as well as face to face interviews, in order to capture all the audiences intended. Changes will need to be made if the DiVito brothers want to stay in business. The purpose of the research will be to assist them in what changes will need to take place. Market research becomes necessary when starting out new businesses or when it comes time to marketing to a new a segment. The data that was retrieved to give us this research information was from google.com and as a secondary source. The primary source of information would be best if it were retrieved in person or online. I think it would be quite easy to have a number to call on the receipt to entice people to call in to complete said survey and then be given a coupon code for their next visit. People would be more inclined to do so if they have something in it for them. Free pastry, $2 off , it could be a variety of different things that the bakery could consider doing to increase more completed surveys. Primary research: This type of research can include focus groups, interviews, observations as well as surveys. “Primary research gives you a lot of specific results. For example, a focus group would be asked specific questions (that you help design) so the information is very targeted to your needs. Also, the research firm would use statistical models to come up with a sample group that is representative of your target audiences, making it very relevant to your business needs. This type of research is more “open ended”. Exploratory research can help you identify problems and will usually involves interviews or focus groups with widespread input from contributors. One major downside to primary market research is cost. Secondary research “Secondary market research is when you use previously completed studies and apply the results to your own situation. These studies are easy enough to find via an internet search or by researching marketing journals—and, on the upside, are usually free or low cost. The drawback for businesses is that the results are not specific to your business, and you may not be aware of all of the variables involved. The idea of it being cheaper may sound more appealing however, it may not be specific enough to what you need for as I mentioned above. The bakery is not only seeing a decline in sales it is witnessing a new target audience that it has to appeal towards. We have already found that adding ethnic types of pastries such as flan, churros and Bánh Tiêu for the Vietnamese and the Hispanic sweet tooth. When we evaluate the target audience in person we are using primary research which is what the DiVito bakery needs most. They need to market to these new cultures, they also need to keep in mind that 2018 and on are accommodating to other health needs such as the gluten free customers. I mentioned previously that customers are not just going in because they can’t make these items at home. They can make some of the items but going into the bakery when you do have the occasional sweet tooth is on a whole new level. You have to accommodate to other people that have other health concerns. What about using coconut oil or special flour? These types of pastries may cost more but I promise you after conducting both primary and secondary research these items will sell fast. The websites that were retrieved to aid in our data research will include the following: Queen.com offered a variety of different baking trends that we could adopt into the DiVito Bakery. Flavors, décor, nostalgia, and even better for you options that were healthier than the normal pastries. Looking up trends for the current year can help guide you into what may work for the following year rather than looking up trends form a few years ago. Traditional culture dishes are always an option regardless of the culture surrounding the neighborhood of the bakery. Consumer baking buying behavior would be just what I mentioned above. Customers are not going in to buy churros just because they may be Hispanic but having those cultural related options will still increase sales. Consumers have still had a steady rate of purchases. People area going out to restaurants because they want to buy something and not worry about the cooking or the aftermath of the cleanup DiVito brothers will have an increase of sales by reviewing the primary data the most and having a few changes on the menu.
